Ingredients

4 Cheese Scones
50g Butter
1 Avocado
1 Lemon for Squeezing
200g Sliced Smoked Salmon
4 Fresh Free Range Eggs
100g Chopped Parsley or Chives
Salt & Pepper to Season

Method

1. Butter your toasted scones

2. Add sliced avocado, layers of smoked salmon and top with a freshly poached egg

3. Add a little sea salt, squeeze of lemon, chopped herbs and enjoy!
