Our Spicy Pear Cobbler is made with warming spices and served with a scone of your choice (Sultana, Plain or even Cheese if you're feeling brave!). If you're going sweet, top it with cream or ice cream, it’s the perfect dish to scone-quer your cravings!

Ingredients
2 Tinned Pears
80g Butter
1 Cinnamon Stick
1/2 tsp Mixed Spice
1/4 tsp Nutmeg
1 Star Anise (Whole)
1/2 tsp Vanilla Essence
200g Demerara Sugar
1 Large Orange
100g Sultanas
2 tsp Corn Starch
100ml Water
Cream or Ice Cream to Serve
Method
1. Drain the canned pears and cut into large diced pieces.
2. In a saucepan, melt the butter and then add the sugar, vanilla and all the spices. Gently heat until the sugar is dissolved.
3. Add the pears to the pan along with the sultanas and gently cook.
4. Zest and juice the orange and add to the pan along with the water and bring to a gently simmer for 5 minutes.
5. Next, mix the corn starch with a little water and stir into the mix until the sauce thickens.
6. Remove from the heat and serve with warmed sultana or plain scones.
