Ingredients
40g Butter
1 Garlic Clove (Crushed)
1 Onion (Diced)
130g Broccoli (Cut into florets)
100g Grated Cheese
6 Eggs
185ml Cream
Salt & Pepper
4 Cheese Scones
Fresh Thyme Leaves
(Optional) 6 Bacon Rashers – Diced
Chilli Jam or Chutney to serve
Method
1. Preheat the oven to 180°C and butter a 12-count muffin tray.
2. Melt the butter in a pan over a medium heat.
3. Sauté the onion and garlic until softened. (If you like, you can add diced bacon at this point)
4. Add the broccoli florets and sauté for several minutes more and reserve.
5. Dice up the scones into 1cm dice and gently mix this into the vegetables.
6. Divide this mix evenly into the muffin tray.
7. In a bowl, whisk the eggs and cream together. Season with salt and pepper.
8.Pour the egg mixture over the vegetables then top with the grated cheese.
9. Baked for 20-30 minutes, or until the mixture is set.
10.Serve warm or cold, with a dollop of chilli jam or chutney
