Ingredients
4 Braeburn Apples
1/2 tsp Ground Cinnamon
100g Soft Brown Sugar
200g Blackberries
20g Butter
1 Lemon (For Juice & Zest)
1 tsp Corn Flour mixed with water
Crumble:
2 Scones
50g Butter
200g Oats
100g Soft Brown Sugar
Method
1. Peel and dice the apples. Melt butter in a pan, add the apples and cook with cinnamon and sugar until soft.
2. Add blackberries, lemon juice, zest, and water. Bring to a gentle simmer until the apples and blackberries are soft and fully cooked.
3. Thicken with the corn flour mix until the mix has the consistency of double cream. Cook for a few more minutes, then keep warm and set aside.
3. Crumb the scones, leaving a few chunky pieces in a bowl. Add the oats, sugar and melted butter and mix all together.
4. Spread the crumble mix on baking tray and bake in pre-heated oven at 180°C for 10 minutes until golden brown.
5. Pour warm filling into a suitable dish, and top with the crumble mix.
6. Serve straight away with thick cream or gently reheat in low oven when needed.
