Cheese Scones with Chilli Beans

Ingredients

4 Cheese Scones
150ml Crème fraîche
200ml Passata
400g Tinned Chopped Tomatoes
100g Onion
20g Olive Oil
400g Tinned Cannellini Beans
400g Tinned Mixed Beans
50g Parsley (Chopped)
20g Brown Sugar
50ml Balsamic Vinegar
10g Dried Chilli
Salt & Pepper to season

Method

1. Finely chop the onion and fry with the chilli flakes until soft.

2. Add the passata, chopped tomatoes and 100ml of water and then bring to the boil. Let the mix simmer for 5 minutes.

3. Add the sugar and balsamic vinegar and cook for a few more minutes. The sauce should be quite thick.

4. Drain and rinse the beans before adding to the sauce, along with the chopped parsley and cook on a gentle heat until the beans are soft and sauce is thick and rich. Season to taste.

5. Warm the scones and pile them up with spicy bean and a good spoonful of crème fraîche.
