When the crisp Autumn air rolls in, there's nothing quite like a bowl of French Onion Soup paired with our warm, golden Cheese Scones, topped with melted Gruyère Cheese. This is the perfect dish for those cosy nights in with the family, where comfort and great flavour meet at the dinner table.

Ingredients
1kg Finely Sliced Onions
50ml Olive Oil
40g Thyme
15g Soft Brown Sugar
2 Garlic Gloves (Crushed)
250ml White Wine
1.5L Beef Stock
250g Gruyère Cheese (Grated)
Salt & Pepper for Seasoning
Method
1. Preheat the oven to 200°C
2. Add the sliced onions, olive oil and thyme sprigs to a large heavy duty roasting tray. Season with salt and pepper and toss to combine. Cover with foil and place in the oven for 45 minutes, giving the onions a stir halfway through.
3. After 45 minutes, remove the foil and the thyme sprigs. Stir and sprinkle over the sugar and then roast uncovered for 15 minutes.
4. Add the crushed garlic, stir well again and roast uncovered for a further 15 minutes.
5. Remove the tray from the oven and place over a medium heat on the hob. Add the wine, stir well again and roast uncovered for a further 15 minutes.
6. Spoon the onion and wine mixture into a large saucepan and add the beef stock. Bring the soup to a gentle simmer and cook for 15 minutes.
7. Meanwhile, warm the cheese scones in the oven topped with gruyère cheese.
8. Ladle the soup into bowls and top each with a warm cheese scone.
9. Scatter over more grated gruyère cheese and sprinkle over a few thyme leaves.
10. Serve and enjoy!
