Ingredients
180g White Chocolate
30g Cocoa Powder
150ml Boiling Water
250g Cream Cheese
300ml Double Cream
3x Eggs
70g Icing Sugar
6x All Butter (Plain) Scones
Raspberries to serve
Cream or Ice Cream to Serve
Method
1. Break chocolate up into small pieces and place into a heat-proof bowl above a pan of gently simmering water until melted. Place to one side.
2. Place cocoa powder into a small bowl and whisk in the boiling water until smooth. Place to one side.
3. Put the eggs and icing sugar into a large heat-proof bowl over a Bain Marie and whisk continuously to cook until light, fluffy and thick. The mixture should form soft peaks with the whisk. Place to one side.
4. In a large bowl, beat the cream cheese with a spatula until smooth before adding the cream and continue beating until smooth and thick.
5. Next, add the melted chocolate and then fold in the cooked egg mixture until fully mixed. Mix gently to keep light and fluffy. Place to one side.
6. Now chop your scones into chunks and place half of them into the bottom of a deep dish OR divide into individual pots/glasses.
7. Drizzle a little of the cocoa mixture over the scones and then top with half the cream mixture.
8. Add more scone pieces on top of this layer, a drizzle of the cocoa and then finally the remaining cream mixture.
9. Cover and place in the fridge to chill overnight. Serve with fresh berries and a dusting of sugar.
